Filosofia Maturano IGT Bio
Filosofia begins with selecting grapes, which are de-stemmed and placed in concrete tanks with 20% stems. A starter made from whole grapes is added to promote spontaneous fermentation at temperatures below 18°C for 20-40 days. After fermentation, the wine is left on the skins/stalks for 10 months in cement vats, then pressed, and the free-run wine is drawn off. The pressed wine rests in concrete for 3-4 months before bottling and is aged for 24 months prior to release.
