L'Essenza Passito Secco Maturano IGT
Maturano grapes, meticulously handpicked ten days prior to the main harvest to maintain their acidity. Following this, they undergo a four-month air-drying process, which concentrates the flavours and enhances sugar levels. The grapes are then softly pressed, including the stems, allowing the must to be initially transferred to stainless steel tanks for a slow, natural fermentation. Subsequently, the must is moved to new 100-liter French oak barrels, where it is aged for four years before undergoing light filtration and bottling.
In appearance, the wine presents a clear and elegant golden yellow hue. On the nose, it reveals intense citrus notes, ranging from cedar to pink grapefruit, complemented by exotic undertones set against a balsamic backdrop of herbal aromas. The palate begins with a savory and mineral entry, showcasing the prolonged skin contact that imparts unexpected tannins typical of red wines. These tannins provide both strength and fragrance, making the wine an excellent match for innovative food pairings, including roast beef and rich, structured fish dishes. - Cesidio Di Ciacca
