Sofia's Organic Extra Virgin Olive Oil
Our EVOO is a single estate extra virgin olive oil, made from Leccina, Itrana, Marina and Moraiolo varieties from trees plants between 80 and 150 years ago.
Carefully selected Olives from our trees at 600m above sea level, producing La Marina Olives by Sofia Di Ciacca Tana.
Harvested in early season, when the olives are still young and vibrant, they are pressed with haste the same day at a certified organic mill. This results in a unique green hue, pleasant floral and fruity notes, creamy texture, with a robust, peppery finish attributed to the high polyphenol content of the Marina variety.

We handpick our olives early in the season when most are still green and cold press them on the same day at our local organic mill. Some varieties of course mature earlier and are therefore mature when picked.
It offers an oil of an unmistakable green colour, with a fruity, floral perfume and a bitter taste with a creamy yet clean texture. A fantastic pepperiness follows at the back of the mouth, which comes from the Marina variety and is due to the high level of polyphenols in our oil.
